Mary is my best friend and mentor, she came into my life just a day after I began my internship in the Fall of 2016 and since then we have not stopped having fun and learning. 

After having several jobs throughout her career, she followed her passion of plant-based culinary arts when she and her husband Sparkle opened Veggie-Mundo, a 100% vegan catering company outside of Boston, Mass. 

Since moving to Belize in 2006 she has adapted her art to indigenous crops while highlighting some of her knowledge writing quarterly articles for the Belize Ag Report.

Mary and I are currently drafting a cookbook that will combine Grassfed with these local crops to expand plant-based awareness.
